Taking inspiration from the wines from Australia, Argentina and New Zealand, the menu features decadent dishes including escargot and molluscs with red pepper and red wine reduction; yam pillows and Bentong ginger duck ragout with Roquefort crème; Australian beef striploin with pommes puree; and lamb French rack with mushroom ketchup and minted pois.

And the three ICON wines chosed for the pairing are the dark and rich Cape Mentelle Carbernet Sauvignon 2013 from Australia, the complex yet elegant Cheval des Andes 2012 red wine from Argentina and the flavoursome Cloudy Bay – Te Wahi 2014 pinot noir from New Zealand.
